Simple Crustless Quiche

I’ve been wanting to share recipes on my blog for several years now and I always put it off. So I am very excited to share with you my first recipe here on the blog.

We’ve had a family member gift us with many eggs from their farm over the last several months. So many in fact that I had to come up with creative ways to eat them. We have been eating scrambled eggs every morning for the last six weeks and we are burnt out.

Its been pretty cold here the last couple of week and one of my favorite dishes is a quiche for breakfast. When fall and winter roll around I usually want to bake all the pies and casseroles. In my mind, a quiche is basically a pie. Most people even use a pie crust, but I prefer a crustless one.

There are so many different ways that you can make this dish and I usually have everything on hand. Sometimes I just throw leftovers in this and it turns out just fine. Leftover taco fixings is great in this too!

Crust-less Quiche

What’s Needed

  • 6 eggs
  • 1/2 cup milk
  • 2 1/2 cup broccoli
  • 1/2 cup English Cheddar ( I used the Rugged Mature from Costco)
  • 1/2 cup chopped ham (sandwich ham works great too!)
  • 1 cup mushrooms sliced
  • 1/4 cup shredded cheddar
  • 1/4 cup parmesan cheese ( I have used both fresh and in the can, they both work great)
  • ranch packet (optional)
  • pie plate ( I have this one) You can get two on amazon for 10.99.

Prep Time

Mix all ingredients together except the cheddar cheese and parmesan. It will take about 5 – 10 mins to mix all these ingredients together if a small child is helping you. If my girls aren’t helping me it only takes about 3 mins. Once you have everything mixed together, pour the mix into a well-buttered dish. This is important or those eggs will stick badly! I use a glass pie plate, but you could any kind of baking dish as long as it is buttered well. After you pour the mix in the pan you can sprinkle on the parmesan and cheddar cheese.

Cooking Time 

It takes about 45 – 50 minutes for this dish to bake. I do not like runny eggs so I always bake mine until they are completely done.

A quick tip is to throw the broccoli in the food processor. My girls eat it much better when it is chopped very finely. You can also throw the mushrooms in there as well, but I usually slice them. For an added kick you can sprinkle a little ranch dressing packet into the mix and it gives it added flavor. I have also bought the frozen broccoli that already had ranch on it and it worked too.

Don’t Waste The Left Overs

Another quick tip is to stick this back in the oven if you are going to have leftovers. We usually finish it off the next morning by sprinkling some fresh cheese on it and putting it back in the oven. You could also do one slice that way if you wasn’t planning on finishing the whole dish. This way it reheats nicely without getting all liquidity. I’m sure you could put this in the microwave, but I just prefer not to.

My girls love to eat fresh fruit with this. Usually, we add some grapes or pineapple to go along with this.
